Stepper motors could be used, I chose servo-motors because I thought they were easier to interface with the Arduino, and I felt that servos are more "standardized" and easier to specify and purchase.
Mounting a camera - I am not entirely sure as I have not tried running this with a load, but could definitely try it out.

Two questions: - wouldn´t it be easier with stepper motors?
The 9g servos should have a strength of 1.2kg each. The ones I bought do, and they're cheap amazon ones. So should be ok.
