What do you recommend coating this in to make it safe for the frogs and constant humidity?

For these I used an acrylic clear coat(krylon specifically) and they've held up great for the last year or so.
Another option I've used for other projects is two part clear polyester resin. It has a thin enough viscosity that you can just paint it on but thick enough that it tends to self level and stick to layer lines as an added benefit, just much messier to apply. You can pick up smallish bottles at craft shops like Michael's.

As for safety the biggest thing is making sure it's designed for/stable in moist environments then letting whatever coating totally cure, including giving it an extra week or so for it to completely gas off before introducing it to the habitat. Beyond that I'd recommend checking with a herpetologist if you want more information.
