Great design, so sad no one has been made it yet.

Any chance of a 1.75mm version?

I'm currently doing a remix of this extruder for 1.75mm filament, I'll publish it once I have it all working, one additional feature on the remix it will have push fit fittings on both sides, as I have my filament roll in a tidy case to keep dust and other contaminants to a minimum, so i run PTFE tubes on both sides.

There's no point - you can just one of the many direct drive extruders which are simpler and easier for 1.75mm filament

I like the design of this one though. If I was content using one of the many direct drive extruders, I'd just use one of them like you said.

What would I need to adjust to make it work for 1.75mm filament?

It's OK-ish. They won't release the firmware source code so there's no chance of improving beyond changing the icons which makes it a bit crap unfortunately.

I am knew to the world of 3d Printing, what exactly would you use this for?

This is used as an extruder to push the plastics through the hotend.
