If I'm not wrong, 2560 have 5 places for stepper motor drivers. For this project as it is now, you will need one stepper motor to control quantity of paint. so I hope some of your X or Z steppers are controlled with same driver. Anyway you could fix the Z distance by hand and use the Z stepper to control the quantity of paint...
My actual CNC, "CoNChi" uses 2 motors for X, 1 for Y and 1 for Z. I made it previous to 3dprinting era, so it's made of DM wood and aluminum and skater bearings by hand.
I can just tell you about my "tooling" trayectory for my CNC... first I engarved and cutted wood with big spindle, then with dremmel, then I cutted 3mm aluminum plaque... After that I attached a 3dprinting extruder to my CNC and made my first prints... then finally I attached the airbrush...
